Sweet Potato Shepherd’s Pie
81 cup each
  1. Preheat oven to 325°F.
  2. Place the potatoes in a large saucepan and cover with water. Bring to a boil then reduce heat to simmer. Cook for about 15 minutes, or until potatoes are tender. Drain and potatoes then return to the pan.
  3. Add milk and mash until smooth. Season with salt and pepper to taste. Set aside
  4. Heat oil in a large fry pan and sauté onion and garlic until tender.
  5. Add ground beef and cook until brown.
  6. Add carrots, peas, tomatoes, and tomato paste. Stir to blend all ingredients together. Add pepper to taste.
  7. Spread beef mixture in a 9×12 baking dish. Top with mashed sweet potatoes and spread into a smooth layer. Bake for 30 minutes uncovered.
Recipe Notes

Make sure internal temperature is 165°F for 15 seconds before serving.

Two cups of mixed frozen vegetables can be used in place of carrots and peas.
