Matzo Brei

Ingredients
  • 5sheets matzo
  • 1large shallotor one medium onion
  • 5large eggs
  • 1/4teaspoon saltplus more for seasoning
  • 2tablespoons butteror vegetable oil
Instructions
  1. Break the matzo into 2-inch chunks and place in colander. Place colander in sink and moisten with cold water until barely soaked through but not falling apart. Drain well and let stand.
  2. Meanwhile, into a large bowl, coarsely grate the shallot (or mince it finely with a knife). Add the eggs and salt and beat well. Season with pepper and beat to combine. Add matzo pieces to bowl and gently toss until well coated.
  3. In a skillet, heat the butter on medium until melted and foaming. Add matzo and egg mixture. Cook 2–3 minutes, until egg is mostly set, stirring often. Season with salt to taste.
Recipe Notes

Mushroom Brei: add 1 cup sliced mushrooms to the butter and cook for about 5 minutes before adding egg mixture

Herby Brei: After cooking egg mixture stir in fresh herbs of choice. Try: 1 tablespoon minced chives and 1 tablespoon chopped dill, or 2 tablespoons chopped basil, or 2 tablespoons parsley

Sweet Brei: After cooking egg mixture, 1 tablespoon brown or white sugar, or a drizzle of honey or maple syrup. Some people like to serve applesauce on the side!
