Instructions
  1. Thinly slice the shallot. In a medium bowl, whisk together vinegar, mustard, mayonnaise, sugar, salt, and pepper until well combined. Whisk in the oil, then stir in the shallot.
  2. Thinly slice the cucumber and add to a large serving bowl, along with all the greens. Drizzle dressing over and toss just before serving.
