Apple, Brussels Sprouts, and Salami Sheet Pan Dinner

  1. Preheat the oven to 400°F. Trim the ends of the Brussels sprouts and cut in half. Peel and quarter the onions. Peel the potatoes and cut into quarters. Slice the salami into strips.
  2. Mix the sprouts, onions, potatoes, and salami with 4 tbsp oil and spread on a parchment-lined baking sheet. Season with salt (in moderation) and pepper. Bake for about 20 minutes in the oven.
  3. Meanwhile, cut the unpeeled apple into quarters, remove the core and cut the flesh into slices. After 10 minutes, add the apple to the sheet pan.
  4. Mix the feta and kale with the remaining oil and lemon juice and top with walnuts. Serve salad with roasted sheet pan vegetables and salami.
