Tortellini Soup
63/4 cup each
  1. Place beans into a 4-5 quart heavy pot with 8 cups of water. Bring to a boil, reduce heat to medium, and cover.
  2. Simmer until the beans are tender, about 1 1/4 to 1 1/2 hours. Add 4 cups of water, seasonings, tortellini, and 1 cup carrot and celery.
  3. Return to boil. Reduce heat to low, cover and simmer 1/2 hour, until tortellini and vegetables are tender. Serve hot.
Recipe Notes

Use any type of beans and lentils. Orange lentils have a less earthy flavor.
