Sweet Potato Patties
61 patty each
  1. Microwave sweet potatoes on high for 6 minutes each until soft. Let cool mildly and remove peel.
  2. Put the sweet potatoes in a medium bowl. Mash them with a fork.
  3. Crush the bread crumbs on a cutting board with a rolling pin or jar.
  4. Put the crushed bread crumbs in a small bowl.
  5. Shape sweet potato into 6 small patties. Roll until coated in crushed bread crumbs.
  6. Heat the oil in a frying pan on medium heat.
  7. Brown each patty on both sides in the oil, about 4-6 minutes each side.

Serve as a side dish in place of french fries.
