  1. Whisk the egg and milk together in a small bowl and set aside.
  2. Heat oil over medium heat in large skillet. Add zucchini, onion and pepper and cook until they begin to soften, about 3 minutes.
  3. Add egg mixture to hot skillet and scramble until it begins to come together, about 3 minutes.
  4. Sprinkle the seasoning and cheese on top. When the cheese is melted, serve warm.

Recipe Tips

Serve with toast or on top of warm whole grains like brown rice or barley.

Replace vegetables with 2 cups of your favorites, such as asparagus, tomatoes, or bell peppers.
