Ingredients
- 1 3/4 cups flour
- 2 teaspoons baking powder
- 4 tablespoons margarine, softened
- 3 tablespoons applesauce
- 2 large eggs, beaten
- 1 cup ripe banana (3 bananas), pureed
- 1/2 cup walnuts, chopped (optional)
Directions
- Preheat oven to 350°F.
- Mix together flour and baking powder in a small bowl.
- In a large bowl, mix together margarine and sugar until well blended.
- Add applesauce, eggs, and banana. Mix well.
- Add flour mixture to the other ingredients in small batches, stirring after each addition.
- Add the walnuts to mixture and gently mix in.
- Pour batter into a lightly greased loaf pan and bake for 50-60 minutes.
