Tuna Potato Salad

Ingredients
- 3 medium potatoes, washed and peeled
- 2 tablespoons cider vinegar
- 1/4 teaspoon white pepper
- 2 tablespoons light mayonnaise
- 1/2 cup low fat plain yogurt
- 2 6-ounce cans tuna, water-packed, drained
- 1 medium carrot, peeled and chopped
- 1/4 cup onion, chopped
Directions
- Dice potatoes and cook in a large pot of salted boiling water until soft. Drain and place in a medium bowl.
- In a large bowl, toss vinegar, pepper, mayonnaise and yogurt with potato cubes. Set aside.
- Break tuna into large pieces.
- Add tuna and chopped carrots, onions and celery to potatoes. Toss together.
- Cover and refrigerate.
