Tomato, Squash, and Onions Casserole

Ingredients
- 1 tablespoon olive oil
- 2 teaspoons garlic, minced
- 1 small onion, sliced
- 1/2 teaspoon black pepper
- 1 teaspoon thyme, dried
- 1 teaspoon oregano, dried
- 1 teaspoon basil
- 1 medium zucchini, sliced thinly
- 1 medium yellow squash, sliced thinly
- 2 medium plum tomatoes, cut into slices
Directions
- Preheat oven to 350ºF.
- Saute garlic and onions in oil over medium heat in a skillet. Cook until onions are tender and browned.
- Mix together pepper and herbs in a small dish.
- Place the onions on the bottom of a baking dish and sprinkle with half the herb mixture.
- Arrange squash and zucchini on top of the onions and then the tomatoes on top.
- Sprinkle with the rest of the herbs.
- Cover and bake 25-30 minutes until squash is tender.
Recipe Tips
Add salt to taste.
