Ingredients

Directions

  1. Preheat oven to 350ºF.
  2. Saute garlic and onions in oil over medium heat in a skillet. Cook until onions are tender and browned.
  3. Mix together pepper and herbs in a small dish.
  4. Place the onions on the bottom of a baking dish and sprinkle with half the herb mixture.
  5. Arrange squash and zucchini on top of the onions and then the tomatoes on top.
  6. Sprinkle with the rest of the herbs.
  7. Cover and bake 25-30 minutes until squash is tender.

Recipe Tips

Add salt to taste.
