Tomato Basil and Bean Pasta Salad

Ingredients
- 1 pound ziti pasta, uncooked
- 2 tablespoons vegetable oil
- 1/4 cup white vinegar
- 2 teaspoons Dijon mustard
- 1/4 teaspoon black pepper
- 1 cup basil, chopped
- 3 tomatoes, chopped
- 1 cup beans, kidney, cooked
- 1 cup mozzarella cheese, shredded (optional)
- 1/2 cup walnuts, chopped
Directions
- Cook pasta according to package directions. Drain and cool.
- In a small mixing bowl, whisk together vegetable oil, vinegar, Dijon-style mustard and pepper to make vinaigrette.
- In a large mixing bowl, combine pasta, beans, basil and tomatoes. Pour vinaigrette over top and toss together. Cover and chill at least 1 hour.
- If desired, add nuts and cheese just before serving, tossing again to combine.
Recipe Tips
Use any type of beans in place of kidney beans, such as black, pink, or white beans.
