Tofu, Tomato and Spinach Soup
41 1/2 cups each
  1. Heat a 3 quart saucepan over medium heat; add oil and chopped onion. Cook onion until softened, but not brown, about 5 minutes.
  2. Stir in garlic and cook just until fragrant, about 30 seconds. Add chicken broth. Bring to a boil.
  3. Add tomatoes and tofu. Lower heat and simmer until tomatoes are soft but not mushy, about 3-4 minutes.
  4. Stir in green onions (optional), spinach, ground pepper and cilantro. Cook just until spinach is wilted.
  5. Remove from heat. Serve hot.
Recipe Notes

Use any greens in place of spinach, such as kale, collards, or mustard greens.
