Ingredients
- 1/2 head lettuce, chopped
- 1 medium green pepper, chopped
- 1 large tomato, grated, juice reserved
- 1 small jalapeno pepper, halved, seeds removed for less heat
- 1 medium red onion, grated
- 2 cloves garlic, minced
- 1/2 cup cheddar cheese, low-fat, shredded
- 1 15-ounce can beans, black, low sodium, drained and rinsed
- 1 pound beef, ground, 85% lean
- 2 2/3 cups frozen corn
- 1/2 cup water
- 3/4 teaspoon chili powder
- 1/4 teaspoon cumin, ground
- 8 6-inch tortillas, whole wheat
- 1 dash black pepper
Directions
- In a large skillet over medium-high heat, cook meat, bell pepper, and garlic, until meat is lightly browned, about 8 minutes. Drain to remove fat.
- Stir in frozen corn, beans, water, and spices. Bring mixture to a boil. Lower heat and cover. Simmer for 10 minutes, or until most liquid is gone.
- While meat mixture is simmering, combine jalapeño to the grated tomato and onion. Stir and set aside.
- Divide the meat mixture evenly among the 8 tortillas. Top each with grated cheese, salsa, and lettuce. Roll up and serve.

Prepare the salsa (onion, tomato, jalapeno) the day before for a quick weeknight dinner.
