Tangy Tomato Pork Chops

Ingredients
- 1 teaspoon canola oil
- 6 4-ounce pork chops, center-cut
- 2 large onions, chopped
- 1 large red pepper, sliced
- 8 ounces mushrooms, sliced
- 1 28-ounce can diced tomatoes, no salt added
- 1 teaspoon brown sugar
- 1 tablespoon balsamic vinegar
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon black pepper
- 12 ounces egg noodles, cooked al dente
Directions
- Heat oil in a large skillet over medium-high heat.
- Add pork chops and cook 2 minutes each side until browned. Transfer to a slow cooker.
- Layer onion, red pepper, and mushrooms over pork chops in slow cooker.
- In a large bowl, combine remaining ingredients, except for the egg noodles, and mix well. Pour over mixture in slow cooker.
- Cover and cook on low for 7-8 hours, until pork is tender.
- Serve over noodles.
Recipe Tips
Use any cut of pork- chops (boneless and trimmed) or tenderloin (and shred after 6 hours).
Use chicken in place of pork.
Add spices for extra flavor- 1/2-1 teaspoon each of garlic powder, paprika, and cayenne pepper.
