Tamale Pie

Ingredients
- 1 pound ground beef
- 1 15-ounce can kidney beans, drained and rinsed
- 2 tablespoons corn starch
- 1 1/2 cups onion, chopped
- 4 teaspoons chili powder
- 1 clove garlic, minced
- 1 28-ounce can diced tomatoes, drained, juice reserved
- 4 ounces peppers, canned
Directions
- Preheat oven to 350°F. Heat a skillet over medium high heat.
- Brown meat and drain fat. Stir in beans and heat through.
- Place cornstarch in a small bowl and add juice from the tomatoes. Mix until smooth.
- Add the cornstarch mixture to the meat and mix well.
- Stir in tomatoes, pepper, onion, chili powder and garlic. Cook and stir until mixture is thickened and bubbly.
- Spoon mixture into a 9x13" baking pan. Bake for 25 minutes.
Recipe Tips
Top with your favorite low-fat cheese about 10 minutes before mixture is done cooking.
