Sunshine Rice

Ingredients
- 1 1/2 tablespoons vegetable oil
- 1 1/4 cups celery, chopped with leaves
- 1 1/2 cup onions, minced
- 1 cup water
- 1/2 cup orange juice
- 2 tablespoons lemon juice
- 1 cup rice, uncooked
- 1/4 cup almonds, slivered (optional)
Directions
- Heat oil in medium saucepan. Add celery and onions, and sauté until tender (about 10 minutes). Add water, orange juice, and lemon juice. Bring to boil.
- Stir in rice and bring back to boil.
- Let stand covered until rice is tender and liquid is absorbed. Stir in almonds, if using. Serve immediately.
