  1. In a large skillet, heat oil on medium-high heat.
  2. Add onion and stir fry until onion is clear and begins to brown, about 7 minutes.
  3. Add carrots and stir until carrots are tender and crisp. Add squash and cook for about 2 minutes. Lower heat.
  4. Add seasonings. Cook for 2 more minutes. Serve as a side dish.

Use seasonings such as 1/2 teaspoon garlic or onion powder, paprika, black pepper, oregano, or parsley.
