Ingredients
- 3 tablespoons oil
- 1/2 cup onion, chopped
- 1 clove garlic, finely chopped
- 1/2 cup celery, chopped
- 1 cup breadcrumbs
- 1/2 cup cheese, shredded
- 2 medium acorn squash, halved and seeded
Directions
- Preheat oven to 350ºF.
- Heat oil in a skillet and cook onions, garlic, and celery,
- Add breadcrumbs and cook over low heat for 5-10 minutes.
- Remove mixture from heat and add cheese.
- Pack mixture into squash.
- Bake squash for 40-50 minutes until tender.
Recipe Tips
Hard winter squash works best, like acorn or buttercup.
