Ingredients

Directions

  1. Preheat oven to 425ºF.
  2. Wash potatoes and prick with a fork. Bake for 50-75 minutes until tender with a fork.
  3. Brown meat in a stock pot then drain fat. Remove meat from pot and set aside.
  4. Add pepper and water to the stock pot and bring to a boil. Reduce heat and simmer for 5 minutes until tender. Drain.
  5. Combine meat with vegetables. Add tomato sauce and heat until warm throughout.
  6. Cut potatoes in half lengthwise and fluff middle with a fork.
  7. Top with sauce mixture and enjoy!

Recipe Tips

You can also bake potatoes in the microwave. Scrub the potatoes clean then place on a microwave safe dish. Prick with a fork and microwave for 5 minutes. Flip potatoes and cook an additional 3-5 minutes.
