Ingredients
- 6 medium potatoes
- 1/2 pound lean ground beef (or ground turkey)
- 1/2 cup green peppers, cut
- 1/4 cup water
- 1 cup tomato sauce
Directions
- Preheat oven to 425ºF.
- Wash potatoes and prick with a fork. Bake for 50-75 minutes until tender with a fork.
- Brown meat in a stock pot then drain fat. Remove meat from pot and set aside.
- Add pepper and water to the stock pot and bring to a boil. Reduce heat and simmer for 5 minutes until tender. Drain.
- Combine meat with vegetables. Add tomato sauce and heat until warm throughout.
- Cut potatoes in half lengthwise and fluff middle with a fork.
- Top with sauce mixture and enjoy!
Recipe Tips
You can also bake potatoes in the microwave. Scrub the potatoes clean then place on a microwave safe dish. Prick with a fork and microwave for 5 minutes. Flip potatoes and cook an additional 3-5 minutes.
