Spring Chicken and Noodles

Ingredients
- 1 cup macaroni, dry
- 1 teaspoon canola oil
- 1 medium onion, chopped
- 1 medium zucchini, chopped
- 1/4 cup salsa
- 1 12.5-ounce can chicken, drained
- 1 14.5-ounce can low sodium diced tomatoes
- 1 3/4 cups corn, frozen, thawed and drained
- 1/2 cup cheddar cheese, shredded
Directions
- Prepare macaroni according to package to al dente. Drain well.
- Heat oil in a large skillet over medium-high heat. Add onion and zucchini and cook until soft, about 5 minutes.
- Reduce heat to medium and stir in salsa, chicken, tomatoes, corn, and cooked macaroni.
- Cook for 10 minutes. Remove from heat and stir in cheese until melted.
- Serve warm.
