Directions

  1. Prepare macaroni according to package to al dente. Drain well.
  2. Heat oil in a large skillet over medium-high heat. Add onion and zucchini and cook until soft, about 5 minutes.
  3. Reduce heat to medium and stir in salsa, chicken, tomatoes, corn, and cooked macaroni.
  4. Cook for 10 minutes. Remove from heat and stir in cheese until melted.
  5. Serve warm.
