Spinach and Meat Cakes

Ingredients
- 1 pound beef, ground, 85% lean
- 16 ounces spinach, frozen, chopped
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups rice, brown, cooked
Directions
- Preheat frying pan.
- Combine all ingredients except brown rice in a large mixing bowl. Mix well.
- Form mixture into 12 small balls and flatten. Place in frying pan.
- Cook over medium heat until cooked on both sides.
- Serve over brown rice.
Recipe Tips
Use any type of ground meat in place of ground chicken, such as turkey, beef, or pork.
