Slow Cooker Greek Chicken and Rice

Directions

  1. Heat oil in skillet over medium-high heat.
  2. Add onion and cook about 5-7 minutes until soft and beginning to brown.
  3. Add garlic and Italian seasoning and cook 30 seconds, or until fragrant.
  4. Transfer onion/garlic mixture to slow cooker. Add rice, chicken, broth, and pepper to slow cooker.
  5. Cook on low for 4-6 hours. Remove chicken from pot and shred with two forks on a cutting board. Return to pot.
  6. Add spinach, diced tomatoes, and feta to slow cooker. Cook additional 30 minutes, or until spinach is wilted.
  7. Stir in lemon juice and lemon zest. Serve.

Recipe Tips

Make your own Italian seasoning with 1/4 teaspoon parsley and thyme and 1/2 teaspoon oregano.

Use any type of rice.  If changing to brown rice, add 1 cup of water with the broth.

No lemon zest? No problem- just leave it out.
