Shrimp Confetti Salad

Ingredients
- 1/2 pound shrimp, frozen cocktail, thawed, peeled, and deveined
- 1 8-ounce can yellow corn, no-salt-added, drained
- 1 cup beans, black, canned, low sodium, drained
- 1 stalk celery, diced
- 2 tablespoons onion, chopped
- 2 tablespoons mayonnaise, light
- 2 tomatoes, diced
- 4 leaves Bibb lettuce
- 1 lime, cut into wedges
Directions
- Chop shrimp coarsely.
- Combine shrimp, corn, black beans, onion, celery, and mayonnaise.
- Top lettuce with shrimp salad and tomatoes. Squirt with lime juice.
Recipe Tips
Use frozen corn in place of canned.
