Salmon with Nectarines and Avocados

Ingredients
- 2 large nectarines, pitted and cut into thin slices
- 1 medium avocado, peeled, pitted, thinly sliced
- 2 tablespoons lime juice
- 2 tablespoons minced chives
- 4 4-ounce salmon fillets
- 1 teaspoon black pepper
- 4 tablespoons olive oil
Directions
- Place cut nectarines and avocados onto 4 plates. Drizzle with lime juice and sprinkle with chives.
- Season the fillets with salt and pepper.
- Heat olive oil in a skillet. When it shimmers, add the fish and cook about 3 minutes.
- Flip over and cook another 3 minutes or until an inserted thermometer reads 145°F for 15 seconds.
- Place a fillet next to the nectarines and avocados. Drizzle with juice from the pan.
