Salmon Florentine

Ingredients
- 2 10-ounce packages frozen chopped spinach
- 1/2 15-ounce can cream of celery soup
- 1/4 cup cheddar cheese, shredded
- 1/2 cup low fat plain yogurt
- 1 teaspoon lemon juice
- 1 pound (4 ounces each) salmon steaks
Directions
- Preheat oven to 375°F.
- Cook spinach according to package directions. Drain well.
- In large fry pan, stir together soup, cheese, yogurt and lemon juice. Stir over low heat until cheese melts.
- Mix 1/2 cup sauce with spinach and spoon into bottom of large casserole dish.
- Add salmon steaks to casserole dish and spoon remaining sauce mixture over them.
- Bake for 20 minutes or until an inserted thermometer reads 145°F for 15 seconds.
