Rotini with Pork

Ingredients
- 1 teaspoon canola oil
- 10 ounces pork tenderloin, trimmed and cut into 1" cubes
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 2 cups broccoli, chopped
- 2 cups carrots, chopped
- 3 tablespoons soy sauce, low sodium
- 1 1/2 teaspoons molasses
- 1/4 cup water
- 12 ounces rotini pasta, cooked al dente
- 2 tablespoons peanuts, dry roasted and unsalted
Directions
- Heat oil in a large skillet over medium-high heat. Add pork and cook 5-7 minutes until cooked. Remove from skillet and keep warm.
- To the skillet, add onion and cook about 5 minutes until lightly browned.
- Add garlic, broccoli and carrots and cook another 3-4 minutes, until almost tender.
- Return pork to skillet. Combine soy sauce, molasses and water in a bowl. Add to skillet and bring to a boil.
- Add pasta to pork mixture and continue cooking over medium heat until pasta is heated through and combined well in the mixture.
- Serve warm and top with peanuts.
Recipe Tips
Use honey or sugar in place of molasses.
Use any type of meat such as chicken, turkey, or beef.
Add 2 cups of spinach, zucchini, summer squash, or mushrooms for added fiber, vitamins, and minerals.
