Pork Tofu

Ingredients
- 1 20-ounce container tofu
- 1 tablespoon olive oil
- 1 pound lean ground pork
- 3 tablespoons soy sauce
- 4 stalks green onion (scallions), chopped
- 1 tablespoon sugar
- 1" piece ginger root, crushed
- 1 medium onion, chopped
Directions
- Drain and cube tofu.
- Heat oil in a large skillet over medium-high heat. Add the pork and cook, breaking it up with a wooden spoon until browned, about 8 minutes
- Add soy sauce, onion, sugar, and ginger to pork.
- Bring to a boil and simmer for 5 minutes over low heat.
- Add tofu and continue cooking until an inserted thermometer reads 165°F for 15 seconds.
- Add green onion (scallions) to top and serve.
