Pork Stew

Ingredients
- 1 teaspoon canola oil
- 1 large onion, diced
- 1 large red pepper, seeded and diced
- 1/8 cup paprika
- 3/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 20 ounces pork tenderloin, cut into 1" cubes
- 1 14.5-ounce can diced tomatoes
- 1/3 cup water
- 12 ounces egg noodles, cooked al dente
Directions
- Heat oil in a large soup pot over medium heat. Add onion and red pepper and cook 5 minutes until onion softens.
- Stir in paprika, garlic powder, and black pepper into vegetables. Mix well.
- Add pork and cook 6-8 minutes until each side is browned.
- Pour tomatoes and water into the soup pot and increase heat to medium high. Bring to a simmer, then reduce heat to medium low.
- Cook until it begins to thicken, stirring occasionally, about 70-90 minutes.
- Serve stew over egg noodles.
Recipe Tips
Top with low-fat sour cream and chives.
Serve over rice in place of pasta.
Try to find Hungarian paprika, or add 1/2 teaspoon cayenne pepper for added spice.
