  1. Heat oil in a large soup pot over medium heat. Add onion and red pepper and cook 5 minutes until onion softens.
  2. Stir in paprika, garlic powder, and black pepper into vegetables. Mix well.
  3. Add pork and cook 6-8 minutes until each side is browned.
  4. Pour tomatoes and water into the soup pot and increase heat to medium high. Bring to a simmer, then reduce heat to medium low.
  5. Cook until it begins to thicken, stirring occasionally, about 70-90 minutes.
  6. Serve stew over egg noodles.

Recipe Tips

Top with low-fat sour cream and chives.

Serve over rice in place of pasta.

Try to find Hungarian paprika, or add 1/2 teaspoon cayenne pepper for added spice.
