Pork Chops with Tomatoes

Ingredients
- 6 3-ounce boneless pork chops fat trimmed
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion sliced in rounds
- 3/4 cup rice, uncooked (white or brown)
- 2 14.5-ounce cans stewed tomatoes undrained
- 1/2 cup water
Directions
- Season pork chops with salt and pepper.
- Heat oil in a pan over medium high heat and sear porkchops till golden brown, about 3 minutes each side.
- Place a large slice of onion on top of each chop. Spoon 1 tablespoon of rice over each onion slice.
- Pour tomatoes and their juice around chops and over rice. Add water to the pan.
- Cover, and reduce heat to medium low. Cook for 20 minutes until rice is done. Add additional water if needed.
Recipe Tips
Use chicken or beef broth instead of water.
Substitute canned diced tomatoes for stewed.
Add sliced peppers with the sliced onion.
