Pork Chops with Sweet Potatoes and Black Beans

Directions

  1. Heat 1 teaspoon oil in skillet over medium-high heat.
  2. Add chops and brown each side, about 3 minutes each. Remove from pan and set aside.
  3. Heat remaining oil in same skillet over medium-high heat. Add onion and sweet potato, stirring occasionally until brown, about 8 minutes.
  4. Stir in water, chicken broth, and rice. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Stir in beans and cilantro. Top with pork chops. Cover again and cook another 10 minutes, until chops are done and rice is tender.

Recipe Tips

Use any type of rice.

Use butternut squash in place of sweet potatoes.

Omit chicken stock and add additional 1/2 cup water.
