Ingredients

Directions

  1. Preheat oven to 350 degrees F.
  2. Place onion, rice and chicken broth in casserole dish. Top with pork chops. Season chops with salt and pepper.
  3. Place mushrooms over chops. Pour tomatoes over the mushrooms.
  4. Cover dish with foil and bake for 30 minutes until rice is tender and pork cooked through.
  5. Serve warm.

Try sautéing the onions and mushrooms before adding them to the dish for added flavor.

Use any type of canned tomatoes in this recipe.

Pork should be cooked to 145 degrees F.
