Pork Chops with Stewed Tomatoes

Ingredients
- 1 large onion, chopped
- 1/2 cup white rice, uncooked
- 1 cup low-sodium chicken broth
- 4 4-ounce pork chops, boneless
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 ounces mushrooms, sliced
- 1 14.5-ounce can stewed tomatoes, with juice
Directions
- Preheat oven to 350 degrees F.
- Place onion, rice and chicken broth in casserole dish. Top with pork chops. Season chops with salt and pepper.
- Place mushrooms over chops. Pour tomatoes over the mushrooms.
- Cover dish with foil and bake for 30 minutes until rice is tender and pork cooked through.
- Serve warm.

Use any type of canned tomatoes in this recipe.
Pork should be cooked to 145 degrees F.
