Peanut Soup

Ingredients
- 1/2 teaspoon olive oil
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon coriander seeds (or fennel seeds)
- 2/3 cup butternut squash, cubed
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 medium potato, diced (about 3/4 cup)
- 1 cup peanuts, dry roasted
- 6 cups low-sodium chicken broth
- 1 teaspoon lemon juice
Directions
- Place oil, crushed red pepper, and coriander in a large stock put and cook until coriander seeds darken.
- Add vegetables and peanuts and cook for 3 minutes.
- Pour in chicken broth and bring to a boil.
- Cover and reduce for 30 minutes.
- Cool slightly and puree mixture.
- Return to the stock pot and heat.
- Add the lemon juice.
- Serve and garnish with croutons.
