Directions

  1. Place oil, crushed red pepper, and coriander in a large stock put and cook until coriander seeds darken.
  2. Add vegetables and peanuts and cook for 3 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Cover and reduce for 30 minutes.
  5. Cool slightly and puree mixture.
  6. Return to the stock pot and heat.
  7. Add the lemon juice.
  8. Serve and garnish with croutons.
