Oyster Stuffing
Oyster stuffing is a traditional holiday dish in New England, but it's delicious year-round.

Ingredients
- 3 cups bread, cubed (day old)
- 1 pint oysters, thawed if frozen (save the juice)
- 2 tablespoons butter or oil
- 1 cup mushrooms, sliced fresh or canned
- 1 medium onion, chopped
- 1 stalks celery, diced
- 1 tablespoon poultry seasoning
- 1/3 cup reduced sodium chicken or vegetable broth (add more if needed, up to 1/2 cup total)
Directions
- Preheat oven (or toaster oven) to 200 degrees. Place bread cubes on a baking sheet and bake for 30 minutes until cubes are completely dried out. Increase oven temperature to 350.
- Sort through the oysters very carefully to remove any shell remnants. Roughly chop them.
- In a large skillet, melt the butter or heat oil over medium-high heat. Add the mushrooms, onion, and celery and sauté until tender, about 5 minutes.
- Add the poultry seasoning and stir to combine. Add the bread cubes, oysters, oyster liquid, and broth and gently stir to combine.
- Place stuffing in a casserole with a cover. Bake covered in the oven at 350 degrees for 30 minutes.
- Remove cover and bake for an additional 10 to 15 minutes, until top is lightly browned.
Recipe Tips
Optional: Use stuffing mix instead of day old bread.
