Microwave Oyster Stew

A Cape Cod favorite, oyster stew is a simple recipe with endless variations. Thaw frozen oysters in the refrigerator for 24 hours before cooking.

  1. Heat butter in microwave-safe 2-quart glass bowl for 60 seconds at medium power in microwave until butter melts. (Or heat it in 5-10 second bursts on high until melted - be careful, it may splatter!)
  2. Add diced onion and minced garlic to bowl and microwave on high for 4-5 minutes until tender.
  3. Add crushed red pepper, paprika, salt, black pepper, and oysters and stir to combine. Microwave 5 minutes on high or until oysters begin to curl on edges.
  4. Add milk, chicken broth, and parsley. Microwave on high for approximately 8 minutes until mixture is hot and beginning to steam, and bubbles just start to appear around the edge. Do not allow to come to a boil. Salt and pepper to taste.

Recipe Tips

Add seasonings and spices you like to make this a one-of-a-kind meal! Try 1/2 teaspoon of your favorite at the onion step. Curry, dried basil, dried oregano, Old Bay spice...the possibilities are endless!

For more veggies, add 1/2-1 cup cooked diced potatoes in the last 2 minutes.
