Directions

  1. In a large mixing bowl, combine all of the turkey, Parmesan, quinoa, egg and parsley. Mix well, form into 1-inch balls, and refrigerate until ready to use.
  2. In a large stockpot, heat the olive oil over medium heat. Add the onions and sauté for 2 minutes.
  3. Add the garlic and sauté for 2 minutes. Add the carrots and celery and sauté for about 7 minutes, or until the vegetables are soft.
  4. Add the sweet potatoes and green beans, season to taste with salt and pepper, and stir.
  5. Add the broth and tomatoes, cover, and bring to a boil. Add the meatballs and return to a boil.
  6. Reduce the heat to low, then simmer for 20 minutes, stirring occasionally.

Recipe Tips

Use any type of ground meat, such as beef, chicken, and turkey.

You can use cooked rice instead of quinoa.
