Mama's Chicken and Rice

Ingredients
- 1 tablespoon vegetable oil
- 1 pound chicken breast, boneless, skinless, diced
- 2 cups water
- 1 cup chunky salsa
- 2 cups instant rice
- 1 16-ounce can whole kernel corn, drained
- 1 cup cheddar cheese, shredded
Directions
- Heat oil in a large skillet over medium-high heat. Add diced chicken and cook until an inserted thermometer reads 165°F for 15 seconds.
- Add water and salsa to skillet and bring to a boil.
- Stir in rice, corn and 1/2 cup of cheese. Reduce heat and simmer 5 minutes, covered. Remove from heat.
- Sprinkle remaining 1/2 cup of cheese on top and serve.
Recipe Tips
If you don't have instant rice, you can cook rice seperately and serve chicken on top of it.
