Directions

  1. Heat oil in a large skillet over medium-high heat. Add diced chicken and cook until an inserted thermometer reads 165°F for 15 seconds.
  2. Add water and salsa to skillet and bring to a boil.
  3. Stir in rice, corn and 1/2 cup of cheese. Reduce heat and simmer 5 minutes, covered. Remove from heat.
  4. Sprinkle remaining 1/2 cup of cheese on top and serve.

Recipe Tips

If you don't have instant rice, you can cook rice seperately and serve chicken on top of it.
