  1. Heat 4 quarts water in large pot over medium-high heat and bring to a boil.
  2. Add pasta and cook 7-9 minutes, or until just tender. Drain water and set pasta aside.
  3. While pasta is cooking, heat oil in a large skillet over medium heat.
  4. Add chicken and garlic, and cook 4-6 minutes until chicken is done. Remove from skillet and keep warm.
  5. To the empty skillet, add tomatoes, tomato sauce, and lemon juice. Simmer 2-3 minutes over medium heat until thickened.
  6. Add cooked pasta, chicken, basil and lemon peel into skillet.
  7. Toss to combine and serve.

Recipe Tips

Use any type of pasta on hand- just cook according to package directions.

Try adding onions or mushrooms by cooking them for 4-5 minutes in the skillet before adding the tomatoes for extra vegetables.

Top with a small amount of parmesan cheese for added flavor.
