  1. Heat grill to medium-high heat.
  2. Combine lemon juice, olive oil, garlic, onions, and chicken in a large zip-top plastic bag. Marinate in the refrigerator for 30 minutes, turning every 15 minutes.
  3. Remove chicken from marinade and sprinkle with salt and pepper. Throw away the remaining marinade.
  4. While the chicken is marinading, heat the water in a medium pot over medium-high heat until boiling.
  5. Stir in rice, cover, and reduce heat to low. Simmer for 30-35 minutes or until rice is tender, stirring occasionally.
  6. Grill chicken for 6 minutes on each side, or until done.
  7. Serve chicken over the rice.

Grill vegetables along with the chicken, such as asparagus or bell peppers to serve with the chicken.

Ensure the chicken reaches an internal temperature of 165 degrees F.
