  1. Preheat the oven to 450 degrees F. Take the chicken out of the refrigerator and place on a rimmed baking sheet or casserole pan.
  2. In a small bowl combine honey, lemon juice, and soy sauce. Season the cavity of the chicken with salt and place rosemary (or thyme), garlic and 4 lemon wedges inside. (If you are using legs or thighs, place the herbs and garlic around the chicken and omit the lemon in this step.)
  3. Brush two thirds of the honey glaze over the chicken. If you don't have a basting brush, you can use a paper towel or coffee filter.
  4. Roast in the middle of the oven for 30 minutes. Reduce the oven temperature to 325 degrees F, rotate the chicken and brush with remaining glaze.
  5. Cook an additional 30 minutes or until an inserted thermometer reads 165 degrees F for 15 seconds.
  6. Transfer to a cutting board and allow to rest for 15 minutes. Carve and serve with lemon wedges.
