Ingredients
- 3 1/4 cups water divided
- 1 1/2 cups brown rice, uncooked
- 1 10.75-ounce cans cream of chicken soup
- 2 12-ounce cans chicken breast, drained
- 2/3 cup low-sodium chicken broth
- 1/4 teaspoon black pepper
- 2 small tomatoes, chopped
- 1/2 cup celery, chopped
- 1/4 cup scallions, chopped
Directions
- Heat 2 1/4 cups water to a boil in a medium saucepan over high heat.
- Add rice to boiling water, cover, and reduce heat to low. Simmer for 30 minutes until rice is tender.
- In a separate saucepan, combine cream of chicken soup, remaining water, chicken, broth, and pepper over medium heat. Cook until heated through, 15-20 minutes, stirring occasionally.
- Serve chicken over rice. "Build your own" stack with remaining toppings.
Recipe Tips
Additional topping suggestions: pineapple, slivered almonds, chow mein noodles, or mandarin orange slices.
Use a slow cooker set on low for 1-2 hours for step 3.
This is an easy recipe to double or triple for hosting events.
