Directions

  1. Heat 2 1/4 cups water to a boil in a medium saucepan over high heat.
  2. Add rice to boiling water, cover, and reduce heat to low. Simmer for 30 minutes until rice is tender.
  3. In a separate saucepan, combine cream of chicken soup, remaining water, chicken, broth, and pepper over medium heat. Cook until heated through, 15-20 minutes, stirring occasionally.
  4. Serve chicken over rice. "Build your own" stack with remaining toppings.

Recipe Tips

Additional topping suggestions: pineapple, slivered almonds, chow mein noodles, or mandarin orange slices.

Use a slow cooker set on low for 1-2 hours for step 3.

This is an easy recipe to double or triple for hosting events.
