Directions

  1. Heat pan. Add 1 teaspoon of oil. Add eggs and cook, scrambling with spatula, about 4-6 minutes.
  2. Remove cooked eggs and set aside.
  3. Add the remaining oil to pan. Stir fry rice, breaking up lumps by pressing rice against pan, for 4 minutes.
  4. Add leftover meat and vegetables. Stir fry until heated, another 5 minutes.
  5. Add green onions, reserved eggs and sauce to taste. Serve hot.

Use any type of chicken in this recipe. Leftovers from another meal, or from a rotisserie chicken work great.
