Directions
- Heat pan. Add 1 teaspoon of oil. Add eggs and cook, scrambling with spatula, about 4-6 minutes.
- Remove cooked eggs and set aside.
- Add the remaining oil to pan. Stir fry rice, breaking up lumps by pressing rice against pan, for 4 minutes.
- Add leftover meat and vegetables. Stir fry until heated, another 5 minutes.
- Add green onions, reserved eggs and sauce to taste. Serve hot.

Use any type of chicken in this recipe. Leftovers from another meal, or from a rotisserie chicken work great.
