Fiesta Corn and Black Bean Salad

Ingredients
- 1 14.5-ounce can corn, low sodium, drained and rinsed
- 1 15-ounce can beans, black, drained and rinsed
- 1/2 cup onions, chopped
- 1 14.5-ounce can diced tomatoes, low sodium, drained
- 1 4-ounce can green chiles, diced, drained
- 2 tablespoons canola oil
- 1/2 teaspoon cumin, ground (optional)
- 1/4 cup cilantro, chopped (optional)
Directions
- Combine all ingredients in medium bowl, except cilantro and lime juice. Mix well.
- If using cilantro and lime juice as a topping, shake cilantro over the top of the salad. Squeeze lime juice over the top of the salad.
Recipe Tips
Serve as a side dish to your favorite main dish, such as tacos or burritos. Alternatively, use as a topping for salads for extra flavor.
