  1. Put broccoli into a microwave safe bowl with 1 tablespoon water. Cover and cook on high for 3 minutes. Drain the water from the bowl and let the broccoli cool.
  2. Cut 4 English muffins in half. Toast the 8 muffin halves.
  3. Spoon 2 tablespoons pizza sauce over each English muffin half.
  4. Sprinkle 1 tablespoon shredded mozzarella cheese on top of each half.
  5. Put 2 tablespoons broccoli and 1 teaspoon shredded carrots on top of each half.
  6. Sprinkle each half with 1 teaspoon grated Parmesan cheese.
  7. Toast in the toaster oven for 2 minutes, until the cheese melts, or use an oven at 350 degrees F.
