Ingredients
- 1 15-ounce can black beans, low sodium, drained and rinsed
- 2 cups frozen vegetable mix broccoli, corn and bell peppers mix
- 2 cups chicken breast, boneless and skinless, cooked diced
- 1/2 cup mozzarella cheese, shredded, low-moisture, part-skim
- 1 tablespoon cilantro, chopped
- 2 tablespoons scallions, chopped
- 2 large pita bread, whole wheat halved
Directions
- Preheat oven to 400 degrees F.
- Combine beans, vegetables, chicken, cheese, and seasonings in a bowl.
- Cut pitas in half and fill with vegetable mixture, dividing it evenly between pita halves.
- Place pitas on a slightly greased baking sheet and bake for 10 minutes, or until vegetables are heated through.
- Serve warm.

Top with salsa and guacamole.
Use any leftover vegetables in place of the frozen vegetable mix.
Use any type of beans- kidney, navy, or white beans all work well.
