  1. Preheat oven to 450 ℉.
  2. Spray 2 rimmed baking sheets with cooking spray. Whisk together mustard, egg, and paprika. Dip chicken thighs in egg mixture, then dredge through breadcrumbs, pressing to stick. Place on 1 prepared sheet.
  3. On the other sheet, spread out carrots. Spray chicken and carrots with nonstick cooking spray; sprinkle with salt. Bake for 20 minutes or until carrots are tender and chicken is cooked (165 ℉).
  4. Garnish with parsley. Serve over greens.
