Crunchy Deviled Chicken

Ingredients
- non-stick cooking spray
- 2 tablespoons spicy brown mustard
- 1 large egg
- 1/2 teaspoon paprika (optional)
- 1/2 teaspoon apple, cored, chopped
- 1 pound chicken thigh, boneless and skinless
- 1 cup breadcrumbs
- 1 pound medium carrots halved lengthwise
- 1/2 teaspoon table salt
- parsley for garnish
- greens for serving
Directions
- Preheat oven to 450 ℉.
- Spray 2 rimmed baking sheets with cooking spray. Whisk together mustard, egg, and paprika. Dip chicken thighs in egg mixture, then dredge through breadcrumbs, pressing to stick. Place on 1 prepared sheet.
- On the other sheet, spread out carrots. Spray chicken and carrots with nonstick cooking spray; sprinkle with salt. Bake for 20 minutes or until carrots are tender and chicken is cooked (165 ℉).
- Garnish with parsley. Serve over greens.
