Crispy Baked Chicken

Ingredients
- 1 pound chicken breasts, boneless and skinless
- 3 cups rice cereal, crushed
- 1/3 cup cheddar cheese, low-fat, shredded
- 2 eggs
- 1/3 cup milk, low-fat
- 1/3 cup all purpose flour
- 1/2 teaspoon thyme, dried
- 1 teaspoon basil, dried (optional)
- 1/2 teaspoon black pepper
Directions
- Combine rice cereal and cheese in a shallow pan or plate. Set aside.
- In a small mixing bowl, beat egg and milk slightly.
- Add flour, thyme and basil. Mix ingredients until smooth.
- Dip chicken pieces in batter.
- Cover entire pieces of chicken with cereal mixture.
- Place in single layer in shallow baking pan coated with nonstick cooking spray.
- Bake for 40 minutes.
- Do not cover pan or turn chicken while baking.
