Cranberry Rice Salad

Ingredients
- 1 1/4 cup long grain white rice, uncooked
- 1/2 cup dried cranberries
- 2 tablespoons dried parsley
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1/4 cup green onion (scallions), diced
- 1/2 teaspoon ground cloves
Directions
- Cook rice according to package directions.
- Mix in all other ingredients to rice when done, fluffing the mixture.
- Cover and chill.
Recipe Tips
You can substitute cooked farro or quinoa for rice.
