Chicken and Spinach-Lemon Rice

  1. Heat water and chicken broth in medium pot over high heat and bring to a boil.
  2. Add rice, lemon juice, and lemon zest to boiling water, reduce heat to medium-low, cover pot, and simmer 20-25 minutes or until tender.
  3. While the rice is cooking, heat oil in a skillet over medium-high heat.
  4. Add chicken and garlic to skillet and cooking 3 minutes each side until chicken is done. Remove from skillet and keep warm.
  5. Stir spinach into cooked rice, cover and let stand 5 minutes.
  6. Serve chicken over the rice.

Recipe Tips

Chicken should be cooked to an internal temperature of 165 degrees F.

If you don't have a lemon on hand, add an additional teaspoon lemon juice in place of the lemon zest.

Use chicken tenderloins or thighs in place of chicken breast.
