Chicken Spanish Rice

Ingredients
- 1 teaspoon vegetable oil
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1/3 cup celery, sliced
- 1/2 cup rice, white, uncooked
- 1 14.5-ounce can diced tomatoes
- 1 12.5-ounce can chicken, drained
- 3/4 cup water
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
Directions
- In a large saucepan, heat oil over medium heat. Add onion, green pepper, celery, and rice and cook until soft, about 5 minutes.
- Add tomatoes, chicken, water, chili powder, and pepper to rice mixture. Break tomatoes apart while cooking.
- Bring to a boil and stir. Cover and cook on low heat. Cook until rice is tender (about 25 minutes).
