Chicken Club Salad

Ingredients
- 1 cup macaroni, uncooked
- 1 medium green bell pepper,chopped
- 2 medium carrots, washed and chopped
- 1 small cucumber, chopped
- 3 medium tomatoes, chopped
- 1/2 pound chicken breast, skinless and boneless cooked and chopped
- 1/2 cup low-fat Italian dressing
- 1 large egg, hard-boiled and sliced (optional)
- 1/4 cup cheddar cheese, shredded
- 6 cups romaine lettuce, chopped
Directions
- Prepare macaroni al dente according to package instructions. Drain and rinse under cold water.
- Combine vegetables, chicken and cooked pasta in a large bowl. Mix well.
- Add dressing and toss to coat evenly. Serve over romaine lettuce and top with egg and cheese.
Recipe Tips
Use any type of lettuce or greens mix.
Try using another grain in place of pasta such as farro, barley, or whole wheat couscous.
Use any of your favorite vegetables in place of any above.
